The caprese salad

The caprese salad is one of my favourite recipes in the summer, when it’s hot and I don’t have time to cook. I usually serve it as a starter or as a light lunch. The ingredients for the caprese are fresh mozzarella or mozzarella di bufala, fresh tomato, fresh basil, good quality extra virgin olive oil, salt and pepper. No cooking is actually required, it’s only a matter of buying the fresh ingredients, wash the tomato and basil, cut them and assemble them.

I usally slice them and then lay on the plate 1 slice of tomato, then 1 slice of mozzarella, then again a slice of tomato and so on until you have a nice plate. Then I put the basil leaves on top. At the end I add the freshly ground black pepper and drizzle the EVO oil all over it.

The Caprese salad is a typical recipe from Campania’s, Capri island, from which it takes its name. The Caprese is a typical summer recipe and can be served as an appetizer or as main course and requires fresh and tasty ingredients like buffalo mozzarella, tomatoes and basil, and extra virgin olive oil.

Ingredients for 4 people:
500 grams of mozzarella or mozzarella di bufala (buffalo mozzarella)
400 grams of fresh tomatoes
Some fresh basil
salt
oregano (or ground black pepper)
extra virgin olive oil

Preparation time: 10 min

procedure: Wash the tomatoes, dry and slice them. Slice the mozzarella into slices 1 cm thick. Rinse the basil.

Assemble everything putting one slice of mozzarella followed by a slice of tomato. Toss a pinch of salt and a pich of ground black pepper. Drizzle the extra virgin olive oil.despite of the various spelling e.g. caprese capresse salad capreze capresi, the correct one is caprese.
