Italian Bruschetta

In my research to cook and eat in a more healthy and sustainable way, I found a number of recipes and ingredients for the Italian bruschetta.

How we make bruschetta in Italy

In Italy we prepare the bruschetta in this way: we slice some bread, it can be from the previous day as well, we toasted or grilled the slices of bread, then we rub some garlic on it and we finish by topping with tomatoes, roast veggies and extra virgin olive oil.

After you chop the veggies, you need to put them in a bowl and then toss the high quality extra virgin olive oil on them, then grind some black pepper and salt, then stir everything together.

Then put the chopped and garnished vegetables on a tray and then put them in the oven. I use a modern fan oven at the temperature of 185° C for 30 minutes. And the result is here below.
